饮食业在城市发展中占有重要的位置。但是它在制做过程中却散发着油烟污染物。近年来,国家对环境质量提出了更严格的要求,尤其把大气污染治理放在突出的位置。而饮食业多位于闹市或居民区内,可以说油烟是与锅炉烟气、汽车尾气等并行的又一大气污染源,油烟的污染治理已迫在眉睫。1996年颁布的大气污染防治法第二十六条规定:城市饮食服务行业的经营者必须采取措施防止油烟对附近居民居住环境的污染。由此可见研究油烟净化技术及其相关设备的必要性。

    本论文围绕着油烟净化技术进行了研究,分析了几种主要的油烟净化方法的利弊,提出了以净化系统必要的设备—风机为主体的油烟净化设备,并通过大量的工程领域的应用表明,风机作为系统的动力设备,完全可以在保证原有性能的基础上增加油烟净化功能,是一种完全创新的油烟解决方案。

    首先在本论文第一章绪论部分根据研究对象提出了油烟的概念,对其物理化学性质做出了定性的分析,并讨论了目前油烟污染的现状,强调说明了油烟对人体的危害,由此说明研究内容的重要意义。在论文第二章,通过对一般尘粒的净化方法的总结,加上油烟的特殊属性分析,提出了一套关于油烟乳化分离方法的新的处理技术及概念。第三章,根据前面提出的净化技术的原理提出了以灶间必要的通风设备—风机为主体来完成的湿法油烟净化设备及系统,拓展了普通风机的用途。在第四章里,结合具体的油烟净化工程实例,进一步对该型净化风机的性能进行了检验。在本文的最后一章里,对前面各章进行总结,肯定了以风机为主体的油烟净化方式在风机领域及有害废气治理领域都是一种创新,具有多方面的优点,其主要特点如下:①集通风、油烟净化及废水处理于一体,且占地面积小,投资少;②设备运行阻力低,噪声振动小,能耗低,油烟净化效率高;③该形式风机还可以派生出其它系列产品,适用于许多其它不同的领域,如除尘、加湿等,可以称为多功能风机。本文同时也指出该型风机的不足之处,为不断适应市场需要,提出了今后的一些改进方案。

Abstract

    The dietetic industry plays an important part in the economy development of cities. Though it gives many delicious food to people, it emits pollutants such as oil smoke. In recent years, much strict regulations has been made in order to improve the environment quality of the Capital city. The dietetic industry almost lies in the downtown or residential areas, so oil smoke has become another air pollute source other than boiler smoke and car smoke. Therefore it is very urgent to eliminate the oil smoke. The item 26th in the law of Air Pollution Prevention and Protection which were issued in 1996 states that the owners of dietetic business must take measures to prevent oil smoke from polluting residents. So it is necessary to study the purify technology of oil smoking and related equipments.

    In this thesis the purificaion technology of oil smoke is studied, in which the advantages and disadvantages of several primary purify technics are analyzed. A purification equipment mainly contain fan is put forward. It shows after large amount of application that by utilizing the fan as the power equipment is an innovative way in oil smoke elimination system.

    The main contents of the thesis are described as follows:

    In the first chapter, the concept of oil smoke is proposed, the current situation of oil smoke pollution is discussed, the physical and chemical characteristics of oil smoke are analyzed quantitatively, and harm of oil smoke pollution to people is emphasized. In the second chapter, through summarizing the general purification methods to dusty particles and analysis of special properties of oil smoke, a new set of technology and its concept is proposed by emulsification separate method to the processing of oil smoke.In the third chapter, a wet-purification systematic equipment is proposed whose mainly which mainly contain fan , the indispensable ventilation equipment in kitchen. In turn the purpose of common fan is extended.In fourth chapter, the performance of the fan is checked further with concrete examples of oil smoking purifying engineering. In last paragraph, the purification method whose main contain fan is summarized and confirmed that it is an innovation both in fan application and in poisonous exhaust gas handling. The purification method has many kinds of advantages as follows: integrating ventilation, oil smoke purification and waster water handling as one system, occupying small area, investing less money;low operational resistance, small vibrate noise, low energy consume, high efficiency of purifying oil smoking; this type of fan can be adapted to many other fields after it is reconstructed, such as cleaning dust, wetting up, so it can be called multi-function fan.

    In this thesis, the shortage of this kind of fan is pointed out. Some improving schemes are brought forward in accordance with the demands of market.
